This coffee uses the highest quality beans carefully selected at the VCU farm in Gia Lai, Vietnam. The harvest season usually begins in October and ends in February of the following year, but this product uses only the highest quality beans harvested in the latter half of the harvest season. At the time of harvest, all the beans are carefully picked by hand, aiming for 100% ripe beans. After washing away dust and impurities, the cherries are naturally fermented for more than 70 hours in their cherry state. This is almost the same method as anaerobic (anaerobic), but the only difference is that some air remains because the air is not completely removed from the fermentation environment, and a very similar effect is obtained. This product is designed to bring out the original flavor of the beans, so the cherries were naturally fermented in a sealed environment for more than 82 hours without adding anything else. The result is very well received. After fermentation, the cherries are removed in their cherry state and the natural drying process begins. When the cherries are completely dry and the coffee beans inside make a rattling sound, the beans are removed and left to rest for 2 to 3 days. They are then dried in the sun for 3 days. This sun drying lasts for about 30 days, with rest periods in between, making it a very laborious drying process that takes about two months in total. However, it produces very delicious Fine Rob beans! Compared to washed beans, the beans are kept in a cherry state for a long time, so the color is browner, and the fruity flavor from the cherry flesh and the original sweetness and aroma of the beans are also brought out!
